98pts The Wine Advocate
"The year was quite homogeneous in the zone for the whites, they got very good yields and balanced wines. The palate is stunning—chalky but with elegance. The roots from the centenary cordon trenzado vines seem to have extracted all the minerality from the soils, and the wine is eminently stony. This is not a small cuvée: they produced some 13,000 bottles of this. It was bottled in July 2025." - Luis Gutierrez
Terroir
Sourced from old-vine Listán Blanco vineyards in Tenerife’s Valle de La Orotava, this wine reflects one of the most distinctive volcanic terroirs in the world. The vines are planted at high elevation on steep slopes of decomposed volcanic soils shaped by Atlantic influence and persistent trade winds. Many of the vineyards are trained in the traditional braided cordón trenzado system, preserving ancient viticultural practices while producing naturally low yields and remarkable concentration. The cool maritime climate and volcanic terrain give the wine its unmistakable tension, salinity, and mineral character.
Winemaking & Technical Notes
Produced from predominantly Listán Blanco, Palo Blanco is crafted with a low-intervention philosophy focused on transparency and site expression. Fermentation occurs with native yeasts, and the wine is aged primarily in neutral oak and concrete to preserve texture and mineral purity without overt wood influence. Lees aging adds depth and structure while maintaining freshness and energy. The result is a wine that balances oxidative nuance, volcanic minerality, and vibrant acidity.
Tasting Notes
Pale gold in the glass, the 2024 opens with layered aromas of lemon peel, green pear, chamomile, sea spray, and smoky volcanic stone. The palate is textured yet energetic, delivering citrus and orchard fruit framed by saline minerality and bright acidity. Notes of herbs, almond, and subtle oxidative complexity emerge through the mid-palate, leading to a long, savory finish marked by tension, texture, and pronounced volcanic character.
Food Pairing & Service
An exceptionally food-driven white, this wine pairs beautifully with grilled seafood, octopus, shellfish, salted fish preparations, and Mediterranean cuisine. It also complements roasted vegetables, soft cheeses, and dishes featuring herbs or olive oil. Serve lightly chilled rather than cold to fully appreciate its texture and layered aromatics.
Cellaring Potential
Built for evolution, Palo Blanco will continue to develop over the next 8–12 years. With age, its vibrant citrus and mineral profile will deepen into more savory, nutty, and saline complexity while retaining the freshness and tension that define great Atlantic wines.
