“En Remilly” is one of the most esteemed Premier Cru vineyards in Saint-Aubin, ideally situated near the borders of Puligny-Montrachet. The site features thin, rocky limestone soils and excellent sun exposure, promoting concentration while maintaining striking minerality.

The elevated position and cooling influences preserve acidity and aromatic precision, resulting in a wine that combines energy with depth.

Winemaking & Technical Notes
Crafted from 100% Chardonnay, the grapes are hand-harvested and gently pressed. Fermentation occurs with indigenous yeasts in French oak barrels, followed by extended aging on the lees to build texture and complexity.

Pierre-Yves Colin-Morey is known for his restrained use of new oak and minimal intervention, allowing the vineyard’s character to shine. The wine is typically aged for around 12–18 months before bottling, with little to no fining or filtration.

Tasting Notes
Pale gold with brilliant clarity, the 2023 vintage opens with a refined bouquet of citrus zest, green apple, and white flowers, layered with subtle notes of flint, almond, and wet stone.

On the palate, it is taut and focused, with vibrant acidity and a linear structure. Flavors of lemon, pear, and mineral salinity unfold with precision, leading to a long, чист and energetic finish marked by elegance and tension.
